Parodi told us about the process, starting from raw materials – the nuts. “We squeeze the nuts and extract the fats to remove the fats inside the seeds; in this way, we can concentrate the proteins and the nutrients.” He further detailed the differences between the nut flours in terms of protein and other nutrients and stressed that we should turn to plant-based sources rather than eating other animals as a protein source.
