HS2-free lager yeast hybrid, organic certified nutrient for sugar fermentation

Tobias Fischborn talks through the launch of an HS2-free lager yeast hybrid and a new nutrient based on yeast extracts which is organic certified and mainly developed for sugar fermentation of hard seltzer to give a cleaner flavor compared to chemical solutions.

I'm here at the Lanaman Brewing stand with Tobias Fishborne, who is the R&D manager.

Welcome to you.

So what's your latest launches and functional solutions for yeast, including wholesale inactive yeast, yeast extracts, and yeast derivatives?

Yeah.

So today we launch a new lager yeast.

This is a specific hybrid.

It's actually a lager type 3 and it's a new hybrid hybridization between acroyo servisi Obayanos, and the key thing here is that we remove the H2S production.

So that was one of the concerns with people who used our diamond lager that produces a little bit.

Which is fine in certain types of lager, but we now have an alternative that produces basically HS3 and then for y yeast extracts and derivatives we have a new nutrient which is based purely on yeast extracts and it's also certified organic.

And this was mainly developed for sugar fermentations for hard seltzer, and gives you a cleaner flavor compared to these chemical solutions.

OK, and obviously strengthening sustainability is a big industry-wide issue.

What's he doing to bolster waste reduction and energy savings.

So we have two approaches.

So one is, for instance, with a new lager yeast that is faster fermenting than traditional lager.

So actually you can reduce the tank occupation, so you need less hardware if you want.

That's one thing.

And then the other area where we are working on is using quaky, so we have the s, and this you can ferment at relatively high temperatures up to 40 °C.

So you don't need to cool, put all the energy into keeping the fermentation at 20 degrees or even colder, and this is a huge energy savings brilliant.

And in what ways is the energy crisis and also inflation impacting your business?

Like everybody else.

All the energy, if it's oil or electricity, went up, skyrocketed, so that definitely had an impact to us.

And then also just getting raw materials as.

Yeah, it's understandable.

And what sort of trends are you noticing now we're into the 3rd day of the show?

What's the main themes of the show?

One is sustainability.

That was one thing, but there's also no alcohol abuse.

They're quite.

Out there and people looking for solutions and yeah that's something we're working on as , so hopefully next year we have something there.

OK, there's a final question, how will you continue to innovate into next year?

Yeah, as I said, we're putting a lot of effort on these no and low alcohol beers.

This is one thing.

And then also for the sustainability, even finding better solutions and reducing energy costs.
