Lycored to showcase fortified fruit gummies with carotenoid-derived colors
24 Nov 2017 --- Lycored has announced that it is to demonstrate at Food Ingredients Europe this year how its carotenoid-derived colors are perfect for fruit gummies. The global carotenoid supplier will be handing out fortified gummies in six different fruit flavors. Their colors are achieved using Tomat-O-Red (Lycored’s range of reds to pink from tomato-derived Lycopene) and Lyc-O-Beta (yellows and oranges from BetaCarotene).
The gummies, provided by US candy manufacturers Albanese, are fortified with vitamin C. This disrupts the stability of some colorants, but not Lycopene or BetaCarotene. In fact, vitamin C amplifies the vibrancy of Tomat-O-Red and enhances the stability of Lyc-O-Beta, Lycored reports.
Tomat-O-Red and Lyc-O-Beta are currently used by several confectionery manufacturers, and Lycored is undertaking formal trials of their performance in gummies. Vitamin C-enriched jelly bears will be exposed to a range of extreme heat and light conditions, and any color changes will be monitored.
“These gummies start bright and we know they’ll stay bright. This is basically a sneak preview ahead of formal stability trials. If our visitors can resist the temptation to eat them on the spot, they’re welcome to hang on to them to see how well our colors perform over time,” says Christiane Lippert, Head of Marketing, Food, at Lycored.
Lycored’s range of tomato-derived flavor and texture solutions will also be on show. The company has developed several new recipes, including a home-style pizza created with an artisanal bakery in Italy. Its base is low in salt but still delivers a delicious flavor thanks to SANTE – Lycored’s tomato-based flavor enhancer. It is topped with tomato sauce designed by an Italian application specialist and enhanced with both SANTE and Lycored’s CTC (Clear Tomato Concentrate).
Lycored will also highlight the versatility of its ingredients in the condiment category. It has created a special BBQ sauce highlighting improved taste from SANTE and CTC, and improved texture from LycoFibers. It will also be showcasing a vegan mayonnaise concept that shows how SANTE can help manufacturers target vegetarian or vegan consumers with improved tasting products.
