KaliSel Solution for Salt Substitutes Making Progress

Nov 18 2011 --- The food grade potassium chloride from K+S KALI GmbH is called “Ka-liSel”. The product, with its proven quality, has been sold under this brand name since the beginning of this year.
KaliSel is a high-purity potassium chloride (KCI) of natural origin. It is used as a substitute for sodium chloride (NaCl) in many areas of the food industry. The new brand KaliSel was presented for the first time this February during the 2011 Salt Reduction Europe conference in London.
With the KaliSel brand, K+S KALI GmbH offers an excellent solution for salt substitutes in food, which is also the least expensive one. The reason: KCl is closest to NaCl in terms of its chemistry. Like food grade salt, the raw material of KaliSel, po-tassium chloride, is of natural origin and is mined, the production processes are comparable.
Throughout the world, scientists are seeking alternatives that can partially replace sodium chloride in foodstuffs without the properties of the products concerned being impaired. In its research into the use of KaliSel, K+S KALI GmbH is supported by research institutes and service providers. At the forefront of this research are cur-rent issues surrounding food recipes, which used KaliSel as a key ingredient. All those involved are working together and using their specific know-how to reformu-late convenience foods, breads, soft cheese and many more in the areas of product development, consumer insights, recipe development and quality assurance. Dif-ferent proportions of sodium chloride have been successfully replaced with KaliSel.
It has proven possible to reduce the proportion of sodium chloride by up to 40% in “KaliSel–For a healthy, natural balance of minerals” certain product groups, without any sensory or physical losses. The results of such R&D work in reformulation are very much welcomed by the food industry as active support. Efforts in reformulation are now coming from all areas of the major food and fast food manufacturers. From the customers’ perspective, close cooperation with K+S KALI GmbH brings further benefits. It is of enormous importance to the processing industry to ensure the high quality and consistency of KaliSel as a prod-uct, while complying with the standards of the food industry. Customers very much appreciate the natural origin of the raw material potassium chloride. With the acquisition of Morton Salt, Inc., one of the leading producers of consumer, industrial and de-icing salts in North America, K+S Aktiengesellschaft also gained further expertise and an important partner in the field of salt substitution. The devel-opment in North America and the demands of the WHO to reduce NaCl in food have been noted and implemented for a long time now. Not only for that reason, close and trusting cooperation with Morton Salt, Inc. plays a key role in the sale and distribution of KaliSel in North America.
In cooperation with the K+S subsidiary esco – european salt company GmbH & Co. KG, Hanover, work is being carried out on various projects to meet the demand for products for sodium-reduced foods. With the mineral salt Balance Salt, a joint project has been implemented and placed in the market. Balance Salt is characterised by its very pleasant flavour. The companies are represented with a joint stand in Hall 3, Booth A89 at the Food Ingredients Europe exhibition, from November 29th to December 1st, 2011 in Paris.
