Addressing the Gluten Free Bakery Trend

Gluten free products are on the rise, but it can be difficult for small bakers to achieve products that meet strict criteria for gluten content of less than 20ppm. To help address this, sourdough supplier Böcker has launched a new line of gluten free sourdough premixes. Varieties include a high omega 3 bread with linseed for a high alpha-linoleic acid content. The bread can be baked in the oven for 15-20 minutes.
