FiE 2024: Roquette to make high-protein sustainable plant-based snacks and desserts
Roquette reveals it will showcase sustainable, health-focused plant-based food innovations, including its high-protein ingredients, at the upcoming Food Ingredients Europe (FiE) 2024 trade show (November 19–21) to meet consumer-driven culinary experiences.
“Our focus at FiE this year is firmly fixed on positive nutrition, which is all about creating appetizing concepts that deliver on both taste and nutrition while addressing the needs of a more health-conscious and environmentally aware world,” says Valérie Le Bihan, head of Customer Marketing Europe at the food and nutrition company.
Roquette claims that attendees will be able to interact with virtual consumer personas, investigate novel food concepts and learn about the latest developments in plant-based nutrition, sustainability and health at the event in Messe Frankfurt, Germany.
Products under spotlight
The company’s newly launched fava bean-based Nutralys Fava S900M, with 90% protein content, is especially highlighted as its “standout” product. It will be used to create a delicious, protein-rich, dairy-free and sustainable dessert.
Nutralys Fava S900M has a 90% protein content.Roquette says it will also offer a nutritious snack — a tomato, feta and herb savory cake — that has a Nutri-Score A rating. It is made with Nutriose FB06 soluble fiber and Nutralys B85F pea protein. The ingredients are noted to bring “rich flavors and a fluffy texture” that also boost daily fiber and protein intake.

Its Nutriose FB06 and Nutralys B85F will also be used to make high-fiber tortillas for plant-based tacos. The guacamole is made creamy with tapioca-based modified starch Clearam TR3010, and the meat alternative is made with high-protein plant-based neutrals T Pea 700M.
Supplement formulators can find lemon-flavored algal-based DHA gummies containing DHA oil and Cleargum PG 9020 modified starch, made to provide a “convenient, tasty and responsible way to consume omega-3.”

Interactive booth
During the show, Roquette will encourage customers to interact with its booth through a video platform that employs AI-powered personas to examine how its culinary innovations meet the needs and preferences of various consumer types — from active students to busy professionals.
“Our overarching aim is to address the needs of consumers by helping our customers solve the challenges they can face in developing brand-new end-products and we’re excited to offer attendees a true taste of what’s on the horizon for food innovation,” says Bihan.
A live cooking demonstration with sampling will be provided, and attendees will also learn about the technical know-how behind each formulation that aims to be healthier, tastier and more sustainable.
Roquette says it will also reveal scoring system improvements and new food concepts that meet nutritional trends.
