Monika Wagner, Project Manager for Advertising/Marketing for JRS, discussed how nutritional advantages, combined with specific functional properties, allows product creations “which nobody in the food industry considered possible some years ago. By using the Vitacel compounds it is now possible to achieve a calorie reduction and fibre enrichtment in meat products at the same time. The resulting final products do not at all differ from standard formulations with regard to sensory properties. If you take actual products from the market with a declared fat reduction and compare them with the JRS meat creations you will find an essentially improved product with increased customer acceptance.”
