Aunt Millie's Launches New & Improved 'Fiber and Flavor' Potato Bread with Hi-maize Resistant Starch

04/12/06 Aunt Millie's has selected Hi- maize resistant starch as its fiber of choice in its new "Fiber and Flavor" potato bread, which has lower calories and higher fiber per serving than traditional white bread. The family-owned company - which has produced bread, buns, rolls, English muffins, bagels and donuts for more than 100 years - introduced the new bread as part of its "Healthy Goodness" line designed to help consumers watch their health while still enjoying great flavor.
According to Rod Radalia, Director of Technical Services at Aunt Millie's, the "Fiber and Flavor" potato bread is a perfect addition to their portfolio of breads. "Our 'Fiber and Flavor' potato bread is soft and tasty, like white bread, but delivers enhanced nutrition with Hi-maize resistant starch. It has 10 fewer calories than the potato bread it replaces, is a good source of dietary fiber, a good source of calcium and contains zero grams of trans fat per serving," said Radalia. "We selected Hi-maize resistant starch to improve our potato bread because it did not change the color, taste or texture of our popular potato bread and it may help to prevent diabetes and heart disease while aiding in digestion."
An independent laboratory at Purdue University conducted a blind taste test to compare the potato bread before and after adding the Hi-maize resistant starch. While 54% of the panelists preferred the Hi-maize bread, there was no significant difference in preference between it and the control. "This was exactly the result we set out to achieve," said Radalia.
